HANDLING AND STORAGE FOR 100% WASABI PASTE

  • Freezer shelf life is approximately 2 years for wasabi paste.
  • Refrigerated unopened shelf life is approximately 60 days.
  • Refrigerated opened shelf life is approximately 30 days.
  • Product should be kept in a cool environment at all times.
  • Commercial sized bags can be thawed and repackaged into smaller containers.
  • Massage tubes prior to use to reintegrate the liquid that naturally separates when the product is thawed.

HANDLING AND STORAGE FOR RHIZOMES

  • Keep refrigerated when not being used.
  • For maximum freshness wrap in damp paper towels.
  • Rinse in cold water every 4-5 days.
  • Trim any dark edges before grating.
  • Refrigerated shelf life is approximately 2-3 weeks.

PREPARATION FOR RHIZOMES

  • Cut the stems off and then turn the rhizome over, grating the end just cut.
  • Grate in a circular motion.
  • After grating, some chefs chop with the backside of a knife, to release more of the flavor.
  • Compress the fresh wasabi into a ball and let stand for five to ten minutes at room temperature so that the sweetness and heat have time to develop.
