Warm Salad of Smoked Shrimp with Pickled Ginger and Wasabi Vinaigrette

2 pounds pork tenderloin
1/2 cup cashews
1 cup minced onion
1/4 cup soy sauce
4 Tablespoons brown sugar
1 Tablespoon ground coriander
1 cup Pacific Farms Asian Vinaigrette Dressing
1 Tablespoon dried mustard
Finely chop cashew nuts. Trim excess fat from meat. Cut meat into 1 -inch cubes.
Combine nuts, onion, soy sauce, sugar, seasonings and Pacific Farms Asian Vinaigrette
Dressing. Add pork cubes; marinate for I hour or longer. Place pork on skewers;
reserve marinade. Grill over coals, or broil for about 10 minutes each side,
brushing once on each side with reserved marinade. Serve pork with additional
Pacific Farms Asian Vinaigrette
Dressing, accompanied by hot rice.
